Personally, I would force the character to choose two domains from the available domains from the pantheon. Personally, I'm not a fan of letting people play as pantheon clerics. In my games, the deities have enough problems with their own churches to bother with the indecisive types. In character, the picking of two domains would represent the character's tendencies in life, thus what aspects of the deities they worship. Jim D.
